🍰Base:
▫️100 g shortbread cookies
▫️50 g butter
▫️25 g sugar
👩🍳Combine cookies, butter and sugar, grind in a blender. Distribute into paper cupcake capsules. Bake in an oven preheated to 350 F (180 C) for 5 minutes.
🍰Cheese mass:
▫️340 g cream cheese
▫️100 g. sugar
▫️45 ml lemon juice
▫️Zest of 1 lemon
▫️1 egg
▫️1 egg yolk
▫️Vanillin
👩🍳Whip cream cheese, sugar, lemon juice, vanillin, egg, yolk, add grated lemon zest. Spread the cheese mixture over the baked bases, smooth. Bake in an oven preheated to 350 F (180 C) for 20 minutes, turn off the oven and leave the cheesecakes in it until completely cool.
Cover the cheesecake pan with plastic wrap
and put in the refrigerator overnight. To serve, carefully remove the cheesecakes from the capsules and decorate as desired. Or you can leave them in the capsule.
Decorate as desired.
